What it measures is angular velocity (omega ~radians / second ) it does not measure translational velocity (hand speed for instance ~ contrary to what windmill-slayer thinks). Angular velocity is proportional to acceleration in axial direction i.e the direction of the shaft (centripetal acceleration) a = v^2/r . Having 2 accelerometers and knowing their separation distance enables him to calculate a signal proportional to angular velocity (which gets digitized... then midi ized) and made audible. Its probably a great training device IMP.
